INGREDIENTS Shortcrust – 1/2 cup butter – 1/4 cup sugar – 1 egg – 1 1/2 cups flour – 1 pinch salt Cheesecake filling – 3 eggs – 400 ml cream – 500 g Greek yogurt – 2 tsp vanilla extract – 1/3 cup sugar – 1/3 cup cornstarch
Don’t overmix the batter, or the cheesecake can crack during baking. Don’t overbake the cake because it will set as it cools down. Let it cool it thoroughly for 2 hours, then chill it in the refrigerator for at least another hour before serving.
SERVE WITH A light dusting of cinnamon and powdered sugar Fresh fruit incl fresh berries Fruit sauce Whipped cream
