This recipe uses a baking soda water bath instead of lye as a safer, widely available alternative without compromising on color, taste, or texture.
INGREDIENTS – 4 cups all-purpose or spelt flour – 7 gr active dried yeast – 1 cup milk – 1 tsp sugar – 1/4 cup butter – 1 tsp salt Soda Bath – 4 cups water filtered – 3 tbsp baking soda Toppings – 1 tbsp sesame seeds white – 1 tsp salt coarse
Activate the yeast with lukewarm milk and sugar. Combine all ingredients and create a homogenous dough. Rest the dough for 30 minutes in a warm place. Preheat the oven to 350F/180C. Form the pretzels and let them proof for another 15 min.
Make the soda water bath by bringing the water and baking soda up to a boil and reduce it to a simmer. Boil the pretzels in the bath for 20 seconds each. Transfer them back to a lined baking tray. Add toppings and bake them for 20-25 minutes.
TIPS Make sure your yeast is fully activated before adding it to the dry ingredients. This recipe makes 4 large pretzels, 8 medium-sized ones, or 16 snack-size pretzels.
