Transfer the dough to a clean surface and shape it into a large circle or rectangle, about 1/2 inch high, using your hands or a rolling pin. Make sure not to overwork the dough at this stage. Using a round cookie cutter, cut out 8 round biscuits or divide the dough into 8 equal shapes with a dough cutter.
Transfer the biscuits to the lined baking sheet. Bake the cottage cheese biscuits in the oven for 20 minutes until they've risen up and are golden brown.
