Preheat oven to 350F (180C). Line a loaf tin with baking paper or grease it with some olive oil.
In a large bowl, whisk the eggs. Add the cottage cheese, panko breadcrumbs, and finely diced onion. Mix to combine. Add the remaining ingredients including the ground beef.

Mix well using your hands or a large spoon - but your hands are best here. Form the mixture into a smooth loaf shape.
Transfer the meatloaf into the lined loaf tin and bake it for 1 hr 10 min or until the internal temperature measures 160°F / 71°C in the centre. Don't overbake the loaf or it will be dry!
Remove the meatloaf from the oven and drain any excess fat. Let it stand for 15 minutes before slicing for the juices to settle and redistribute.
If you're meal prepping this meatloaf as a protein for the week, let it cool completely and store it in an airtight container in the fridge for up to 4 days. Alternatively, slice it up and store it in the freezer for up to 3 months.
Notes
Do not overmix: Combine everything with your hands until it just comes together. Overworked mince goes tight and rubbery.Sheet pan: You can shape the loaf on a lined baking sheet or a rack over a pan instead of packing it into a loaf tin. It lets the outside brown on all sides.
