This creamy Hamburger and Potato Casserole is packed with fresh spring flavors. With just 10 minutes of hands-on prep time this easy ground beef potato bake is perfect for busy weeknights.
Wash the potatoes, pat-dry them, and cut them into 1/2-inch cubes.
2 lb potatoes
Add the diced potatoes and sliced green onion tops to the casserole dish. Reserve 1 tbsp as garnish.
In a medium pan, heat the olive oil over medium-high heat. Add the ground beef and break it up into small pieces while browning it. Season it with salt and pepper.
Add the chopped white ends of the green onions and the garlic. Cook for 1-2 minutes until softened and fragrant while stirring. Remove the pan from the heat and transfer the browned beef mixture to a 9 x 13 inch casserole dish.

To make the sauce, add everything to a blender and blend it until smooth. Add the sauce on top and gently stir everything until thoroughly combined.
1 cup cottage cheese, 1 cup milk, 1/2 cup parmesan cheese, 1/2 tsp salt, 1/8 tsp black ground pepper, 1 garlic clove
Add the mozzarella cheese on top and bake for 40 minutes.

Remove the hamburger potato casserole from the oven and let it set for 10 minutes before serving. Garnish it with the remaining green onions or fresh parsley. Enjoy!
