Remove the lamb steak from the refrigerator 30 minutes before cooking them. Pat dry the steaks with a paper towel and cut them up into bite-sized cubes - about 1/2-inch wide. Generously season the steak bites with salt and pepper.
2 lamb leg steaks, 1 tsp salt, 1/2 tsp ground black pepper
Heat a cast iron pan over high heat. Add the oil, followed by the steak bites, and cook them for 1-2 minutes on each side.

Reduce the heat to low and add the butter and minced garlic. Cook for 30 seconds to 1 minute for the garlic to become golden. Watch it closely to ensure it doesn't burn.

Remove the steak bites from the pan immediately to ensure they don't continue to cook further. Let them rest for 10 minutes for the juices to redistribute, and serve with chopped parsley or mint.
