Lamb Steak Bites
These garlic butter Lamb Steak Bites are incredibly quick, easy to make, and are extra juicy and flavorsome. Made with just a handful of ingredients, they’re the perfect tender, meaty appetizer.

I served them on a bed of spicy and creamy harissa hummus, but my mint chimichurri is another delicious combination.

Lamb Steak Bites
Ingredients
- 2 lamb leg steaks diced
- 1 tsp salt
- 1/2 tsp ground black pepper
- 1 tbsp vegetable oil heat-resistant, such as avocado oil
- 2 tbsp butter
- 2 garlic cloves minced
- 1 tbsp fresh parsley finely chopped, to garnish
Instructions
- Remove the lamb steak from the refrigerator 30 minutes before cooking them. Pat dry the steaks with a paper towel and cut them up into bite-sized cubes – about 1/2-inch wide. Generously season the steak bites with salt and pepper.2 lamb leg steaks, 1 tsp salt, 1/2 tsp ground black pepper
- Heat a cast iron pan over high heat. Add the oil, followed by the steak bites, and cook them for 1-2 minutes on each side.1 tbsp vegetable oil
- Reduce the heat to low and add the butter and minced garlic. Cook for 30 seconds to 1 minute for the garlic to become golden. Watch it closely to ensure it doesn't burn.2 tbsp butter, 2 garlic cloves
- Remove the steak bites from the pan immediately to ensure they don't continue to cook further. Let them rest for 10 minutes for the juices to redistribute, and serve with chopped parsley or mint.1 tbsp fresh parsley

Ingredients and substitutions

- Steak – I use two lamb leg steaks but beef sirloin or rump steak works well too.
- Garlic – Fresh is best. You can use garlic powder but I recommend using fresh garlic if possible.
- Butter – Unsalted butter is best but you can use salted and reduce the initial salt slightly.

1. Make sure the pan is fully heated before searing the steak bites to form a crust on the edges of the bites.

2. Reduce the heat to ensure the butter and garlic don’t burn. Remove the bites from the pan as soon as they’re done.

- Season well: Season the steak bites well before adding them to the heated pan.
- Heat pan: The pan needs to be heated well before adding the steak bites. A cast-iron skillet and heat resistant oil work best.
- Single layer: Make sure the bites are cooking in a single layer to prevent them from stewing which will prevent a crust to form.
- Watch it: Watch the butter and garlic to make sure they don’t burn or they will be bitter.
- Let them rest: Just like full-sized steaks, rest the bites for 10 minutes before serving for the juices to redistribute.
