Place pulled lamb, shredded mozzarella, Sriracha, mayonnaise, and fresh mint on one slice of bread.
1/3 cup pulled lamb, 1/3 cup shredded mozzarella, 1 tsp Sriracha sauce, 2 tsp mayonnaise, 1 tsp fresh mint
Top with the other slice of bread.
Place the sandwich on the grill pan, oil side down. Cook for 2-3 minutes, or until golden brown and the cheese is melted.
Flip the sandwich and cook for an additional 2-3 minutes or until golden brown on the other side.
Remove the sandwich from the pan and cut in half. Serve immediately.

Lamb meat: Leftover lamb bolognese, roast lamb, or grilled lamb all work well too.Sauces: Get creative with the sauces. Try your favorite hot sauce, more BBQ sauce, mint chimichurri.Cheese: Feta cheese or goat cheese make delicious additions as well.
