Grilled Lamb Sandwich

Transform your leftover lamb into an easy cheesy grilled lamb sandwich. Perfect for a quick lunch or a simple dinner, this recipe comes together in just 10 minutes, thanks to pre-cooked BBQ pulled lamb.

Leftover lamb sandwiches

Just like my pulled lamb burgers, this quick lunch or easy dinner comes together in 10 minutes and 7 ingredients thanks to meal-prepped slow-cooked pulled lamb.

Enjoy with a simple side salad such as my Insalata Mista for a complete meal.

  • Lamb – I use leftover BBQ pulled lamb for these grilled sandwiches as the tender and juicy meat works well in a cheesy sandwich. But any leftover roasted or grilled lamb would work. BBQ pulled chicken is another delicious alternative.
  • Sauces – Depending on how saucy your lamb meat is, add extra BBQ sauce, hot sauce such as Sriracha, mayonnaise, mint chimichurri, or tzatziki.
  • Cheese – Quick melting cheese such as mozzarella works well. Try adding some crumbled feta for extra flavor.
  • Bread – Sourdough is a classic choice but I typically use a regular sandwich bread such as my cold-fermented bread.
  • Oil – Cover the outside of the bread with some extra-virgin olive oil, a lick of butter, or some mayonnaise to make the bread extra crispy.

Put the filled sandwich into the pan. Cook for 3-4 minutes per side pressing down lightly with a spatula.

I use a Breville Adjusta Grill & Press to make grilled sandwiches at home. It quickly heats up, making grilled sandwiches in a mere 5 minutes.

Ingredients
 
 

  • 2 sourdough slices
  • 2 tsp olive oil extra virgin
  • 1/3 cup pulled lamb
  • 1/3 cup shredded mozzarella
  • 1 tsp Sriracha sauce or other hot sauce
  • 2 tsp mayonnaise
  • 1 tsp fresh mint finely sliced

Instructions
 

  • Preheat a grill pan or skillet over medium heat.
  • Spread oil on both outer sides of the bread.
    2 sourdough slices, 2 tsp olive oil
  • Place pulled lamb, shredded mozzarella, Sriracha, mayonnaise, and fresh mint on one slice of bread.
    1/3 cup pulled lamb, 1/3 cup shredded mozzarella, 1 tsp Sriracha sauce, 2 tsp mayonnaise, 1 tsp fresh mint
  • Top with the other slice of bread.
  • Place the sandwich on the grill pan, oil side down. Cook for 2-3 minutes, or until golden brown and the cheese is melted.
  • Flip the sandwich and cook for an additional 2-3 minutes or until golden brown on the other side.
  • Remove the sandwich from the pan and cut in half. Serve immediately.

Notes

Lamb meat: Leftover lamb bolognese, roast lamb, or grilled lamb all work well too.
Sauces: Get creative with the sauces. Try your favorite hot sauce, more BBQ sauce, mint chimichurri.
Cheese: Feta cheese or goat cheese make delicious additions as well.
