Refreshing homemade chia lemonade! Easy to make, delicious, and perfect alternative to sugary sodas. Try this speedy seedy thirst quencher this summer!
Roll the lemon on a hard surface to release the juices. Cut it in half and cut 2 slices of one half of the lemon. Set aside. Juice the remaining lemon halves.

In a medium-sized jug, combine lemon juice, honey, and salt. Stir vigorously for 1 minute for the honey to dissolve.
2 tbsp honey, 1/8 tsp salt
Stir in the chia seeds and top up with water. Adjust sweetness to taste. Add the lemon slices.

Transfer the jug to the refrigerator to let the chia seeds gel up for 20 minutes. Stir and serve over ice in two large glasses. Enjoy!

Filtered water: Make sure to use filtered water to avoid the taste of chlorine.Salt: I love adding a pinch of salt to balance out the flavors but you can easily omit it.Storage: Stored in an airtight bottle in the fridge, it stores well up to 3 days. I recommend freezing the lemon juice in bulk if you have excess fruit but make the chia lemonade fresh.
