Ingredients and substitutions

  • Chia seeds – Yes, you can use white, black, or a mixture of both chia seeds to make this lemonade.
  • Honey – I use honey to sweeten this chia drink but you can also opt for agave syrup, maple syrup, sugar, or natural sweeteners such as stevia.
  • Lemon – You’ll need the juice of one large lemon for this recipe. Substitute some of it with lime juice for a tropical twist.
  • Water – Make sure to use filtered water to make this lemonade. Sparkling water or soda water can add some effervescence.
  • Salt (optional) – I love adding a pinch of pink salt to balance out the flavors but you can omit it.

How to make chia lemonade

Step 1: Cut 2-3 slices of the lemon. Set aside. Juice the remaining lemon.

Step 2: In a large jug, combine lemon juice, honey, and salt. Stir vigorously for 1 minute for the honey to dissolve.

Step 3: Stir in the chia seeds and top up with water. Add the lemon slices.

Step 4: Refrigerate for 20 minutes, stir, and serve over ice.

Serving

Serve this seedy lemonade chilled over ice for a refreshing summer drink. It also makes a great breakfast beverage to get you going or an invigorating afternoon pick-me-up.

Ingredients
  

  • 1 lemon large
  • 2 tbsp honey
  • 1/8 tsp salt optional
  • 2 tbsp chia seeds
  • 2 cups water

Instructions
 

  • Roll the lemon on a hard surface to release the juices. Cut it in half and cut 2 slices of one half of the lemon. Set aside. Juice the remaining lemon halves.

  • In a medium-sized jug, combine lemon juice, honey, and salt. Stir vigorously for 1 minute for the honey to dissolve.

  • Stir in the chia seeds and top up with water. Adjust sweetness to taste. Add the lemon slices.

  • Transfer the jug to the refrigerator to let the chia seeds gel up for 20 minutes. Stir and serve over ice in two large glasses. Enjoy!
