This Lamb Pesto Pizza is a must-try this spring. Topped with a vibrant mint pesto, sweet cherry tomatoes, fragrant fresh mint leaves, and grilled, juicy lamb steak, it'll take your pizza nights to a new level this season.
Preheat your pizza oven or a pizza stone in your oven or BBQ.
Shape the pizza dough on a lightly floured surface into a 12-inch wide pizza base.
Add the pesto to the base, distributing it evenly with the back of a spoon covering the whole base apart from 1/2 inch of the edge.
1 pizza base, 1/4 cup mint pesto
Evenly place the halved cherry tomatoes on top of the base alongside the lamb steak slices. Top it with grated mozzarella cheese.
1/2 cup cherry tomatoes, 1 grilled lamb steak, 1/3 cup mozzarella cheese
Cook the pizza for 1-2 minutes in your pizza oven, rotating it frequently. If you're cooking it on a pizza stone in your conventional oven or BBQ, it'll take about 10 minutes to cook.
Remove the lamb pesto pizza from the pizza oven, oven, or BBQ, and garnish with freshly cut mint. Serve immediately!
1 tbsp fresh mint

Notes
Lamb steak: Slightly undercook the steak as it will continue to cook in the pizza oven.Home oven pizza: If you're using freshly cooked lamb steak and baking your pizza for a longer period in a conventional oven, it's best to add the sliced steak towards the end of the baking time, or even after the pizza is cooked. This prevents the lamb from becoming overcooked and tough.Storage: Leftover pesto pizza can be stored in an airtight container in the fridge for 2 days. Reheat it in the oven or a microwave.
