I got an Ooni pizza oven from Santa last Christmas and ever since, I have been enjoying making all kinds of pizza but especially lamb pizza of course. My family promoted some of them onto the repeat list including my lamb sausage pizza and this lamb pesto pizza – although some kids keep pulling off the toms, to be honest!

I personally love this homemade pesto pizza because it’s a great way to use up any leftover pesto lurking in the fridge. Freshly cooked lamb steak is delicious but so if some leftover lamb roast meat. Mint and lamb is a classic match and this homemade pizza is packed with both – mint pesto, grilled lamb steak strips, and fresh mint leaves as a garnish.

Ingredients

  • 1 pizza base fresh or precooked, about 12 inches wide
  • 1/4 cup mint pesto or other pesto
  • 1/2 cup cherry tomatoes halved
  • 1 grilled lamb steak cut into slices
  • 1/3 cup mozzarella cheese grated
  • 1 tbsp fresh mint finely sliced

Instructions

  • Preheat your pizza oven or a pizza stone in your oven or BBQ.
  • Shape the pizza dough on a lightly floured surface into a 12-inch wide pizza base.
  • Add the pesto to the base, distributing it evenly with the back of a spoon covering the whole base apart from 1/2 inch of the edge.
1 pizza base, 1/4 cup mint pesto
  • Evenly place the halved cherry tomatoes on top of the base alongside the lamb steak slices. Top it with grated mozzarella cheese.
1/2 cup cherry tomatoes, 1 grilled lamb steak, 1/3 cup mozzarella cheese
  • Cook the pizza for 1-2 minutes in your pizza oven, rotating it frequently. If you're cooking it on a pizza stone in your conventional oven or BBQ, it'll take about 10 minutes to cook.
  • Remove the lamb pesto pizza from the pizza oven, oven, or BBQ, and garnish with freshly cut mint. Serve immediately!
    1 tbsp fresh mint

Notes

Lamb steak: Slightly undercook the steak as it will continue to cook in the pizza oven.
Home oven pizza: If you’re using freshly cooked lamb steak and baking your pizza for a longer period in a conventional oven, it’s best to add the sliced steak towards the end of the baking time, or even after the pizza is cooked. This prevents the lamb from becoming overcooked and tough.
Storage: Leftover pesto pizza can be stored in an airtight container in the fridge for 2 days. Reheat it in the oven or a microwave.

Ingredients laid out to make a lamb pesto pizza.
  • Lamb – I used freshly cooked lamb steak for this recipe. Check out my lamb steak with chimichurri recipe on how to cook it perfectly. Leftover roast lamb such as my pink lamb leg roast, classic lamb rump roast, or even pulled lamb shoulder meat makes a delicious lamb pizza topping as well.
  • Pizza dough – I use my cold-fermented pizza dough recipe but any fresh or store-bought pizza dough will work here.
  • Mint pesto – I use my homemade mint pesto which is packed with fresh mint, garlic, lime, cashew nuts, red chili flakes, and parmesan cheese. It goes beautifully with lamb but a traditional basil pesto or my sunflower basil pesto as a nut-free alternative are great options too.
  • Tomatoes – Cherry tomatoes add some color and extra freshness to the pizza but you can use any type of fresh tomatoes including Roma tomatoes for a lower acid option.
  • Cheese – I use quick-melting shredded mozzarella cheese for that eye-catching cheese-pull but you can use fresh mozzarella or your favorite pizza cheese blend. Feta is a delicious option too.
  • Mint – Lamb loves mint and fresh leaves add extra color and flavor at the end for a complete feast of the eyes and tastebuds. Substitute with fresh basil leaves if needed.

Top 3 pesto pizza tips

Even Toppings: To ensure an even flavor experience in every slice, distribute the toppings evenly across the pizza base. This way, each bite will have the perfect balance of the toppings.

Pizza Oven Steak: Cook your lamb steak in a cast iron pan directly in your pizza oven. The intense heat will create a delicious crust on the steak while it cooks.

Shortcuts: To make this pesto pizza even faster and easier, use store-bought pesto and pre-made pizza bases. Utilizing leftover cooked lamb is another fantastic shortcut that adds incredible flavor with minimal effort.
