These quick and easy spicy lamb sausage wraps are made with Merguez sausages, hot sauce, and jalapeños, all wrapped in flour tortillas. Perfect for a fast lunch or weeknight dinner as they can be made in just 20 minutes!
To make the lamb sausage filling, remove the Merguez sausage meat from the casings. Heat a large cast-iron skillet or frying pan over medium heat. Add the lamb sausage meat and break it apart into little bits using a wooden spatula or spoon. Cook for 5 minutes until lightly browned and drain any excess fat.

To make the lemon yogurt sauce combine all ingredients in a small bowl. Season to taste with salt and black pepper. Depending on the consistency of the yogurt you're using, add more water if the sauce is too thick.
Lay the large flour tortillas out on a surface. Spread 2 tbsp of lemon yogurt sauce in the middle of each wrap.

Add 1 cup of washed and dried lettuce to each as well as 1/4 of the cooked lamb sausage and 3 cucumber sticks.

Add 1 tbsp of crumbled feta cheese to each wrap, followed by a drizzle of hot sauce, and fresh mint leaves. Garnish with red jalapeño slices.

Fold in the sides and tightly roll up the tortillas, starting from the bottom edge. Cut the wraps in half and serve immediately.

Drain excess fat: Drain the cooked lamb sausage to prevent soggy wraps.Don't overfill: Avoid overfilling the wraps for easy rolling and eating.Serve fresh: Wraps are best served immediately, but the lamb sausage and lemon yogurt sauce can be prepped in advance.Storage: You can meal prep all ingredients ahead and put the lamb wrap together in 5 minutes flat. I don't recommend making them more than 3 hours in advanced as the salad will become soggy.
