Add all ingredients to a small saucepan. Stir to combine.
1 lb strawberries, 1/4 cup granulated sugar, 1 tbsp lemon juice
Bring it to a simmer over medium heat. Stir occasionally to prevent the strawberries from burning at the bottom.
Once the strawberries have softened, remove the saucepan from the heat and puree it with a handheld immersion blender until smooth.
Optional step - reduce puree: Bring the strawberry puree to a simmer over medium to low heat again for 5-7 minutes or until it has reached your desired consistency.
Remove the strawberry puree from the heat and let it cool. It will further thicken as it cools.

Adjust to taste: Experiment with the amount of sugar and lemon juice to achieve your desired sweetness and tartness.Strain: Pour the puree through a fine mesh sieve to remove any seeds or lumps for a smooth and seedless puree.Cornstarch slurry: To thicken the puree further you can add 1 tbsp of cornstarch mixed in 1 tbsp of water and add the slurry to the pureed berries while whisking vigorously.
