With just 3 simple steps and 3 ingredients, you can make this delicious strawberry puree with fresh or frozen strawberries.

Just like my hibiscus syrup or vanilla syrup, this puree is a great alternative to artificial flavorings and extracts. It adds fresh and natural strawberry flavors to a variety of dishes.

Ingredients
 
 

  • 1 lb strawberries fresh or frozen
  • 1/4 cup granulated sugar
  • 1 tbsp lemon juice

Instructions
 

  • Add all ingredients to a small saucepan. Stir to combine.
    1 lb strawberries, 1/4 cup granulated sugar, 1 tbsp lemon juice
  • Bring it to a simmer over medium heat. Stir occasionally to prevent the strawberries from burning at the bottom.
  • Once the strawberries have softened, remove the saucepan from the heat and puree it with a handheld immersion blender until smooth.
  • Optional step – reduce puree: Bring the strawberry puree to a simmer over medium to low heat again for 5-7 minutes or until it has reached your desired consistency.
  • Remove the strawberry puree from the heat and let it cool. It will further thicken as it cools.

Notes

Adjust to taste: Experiment with the amount of sugar and lemon juice to achieve your desired sweetness and tartness.
Strain: Pour the puree through a fine mesh sieve to remove any seeds or lumps for a smooth and seedless puree.
Cornstarch slurry: To thicken the puree further you can add 1 tbsp of cornstarch mixed in 1 tbsp of water and add the slurry to the pureed berries while whisking vigorously.
Storage: The puree will last for up to 5 days in an airtight container stored in the refrigerator. You can also freeze it in ice cube trays or an airtight container.

Ingredients and substitutions

  1. Strawberries – You can use fresh or frozen strawberries for this recipe. I use frozen for convenience as they’re available all year around.
  2. Sugar – Granulated sugar works well. You can also try using natural sweeteners such as honey, agave, or maple syrup.
  3. Lemon – Lemon juice helps retain the vibrant color of the strawberries. Don’t skip it!

Variations

Strawberry vanilla puree: Add 1 tsp of vanilla extract or vanilla syrup to the fruit for a richer taste.

How to make strawberry puree

1: In a saucepan, combine the strawberries, sugar, and lemon juice. Cook over medium heat, stirring occasionally, until the strawberries break down and the sugar dissolves.

2: Remove from the heat and puree it until smooth with an immersion blender.

3 (optional): If you prefer a thicker puree, simmer over medium heat until it reaches your desired consistency.

Serving Ideas

Ice cream and yogurt: Top your favorite ice cream or homemade Greek yogurt with a dollop of strawberry puree for a sweet and tangy treat. You can also use it to make frozen yogurt bark or condensed milk berry ice cream.

Cakes: Use the puree as a filling like in my strawberry pound cake, or use it to make a fruit glaze or frosting as a tasty topping.
