Variations
Strawberry vanilla puree: Add 1 tsp of vanilla extract or vanilla syrup to the fruit for a richer taste.
Mixed berry sauce: Add other in-season berries such as blueberries, raspberries, and blackberries for a mixed berry compote.
Strawberry rhubarb coulis: Another delicious combination is strawberry and rhubarb. Stew them together before blending them into a smooth coulis.
How to make strawberry puree
Step 1: In a saucepan, combine the strawberries, sugar, and lemon juice. Cook over medium heat, stirring occasionally, until the strawberries break down and the sugar dissolves.
Step 2: Remove from the heat and puree it until smooth with an immersion blender.
Step 3 (optional): If you prefer a thicker puree, simmer over medium heat until it reaches your desired consistency.
