Preheat the oven to 350°F (180°C). Spread the pecans on a baking sheet and roast for 5 minutes.

Add the sesame seeds and almond flour, stir, and roast for another 3-4 minutes, until lightly golden and fragrant. Watch closely toward the end to prevent burning.

Let cool completely, then finely chop the pecans by hand using a knife or briefly pulse the roasted mixture in a food processor or blender. Keep some texture.
Let the roasted mixture cool completely before adding the sugar and spices. Mix in the date sugar, cinnamon, nutmeg, allspice, and sea salt.
