2 Ingredient Cottage Cheese Biscuits

I love adding biscuits to hearty casseroles to add sustenance and comfort. I made these 2 ingredient biscuits to add to my cowboy casserole and they have been a welcome addition ever since.
Use them instead of tater tots to make my stroganoff inspired tater tot casserole or instead of hash browns for a comforting creamy ground beef casserole.

2 Ingredient Cottage Cheese Biscuits
Ingredients
- 2 cups self-rising flour
- 1 1/2 cups cottage cheese full-fat
Instructions
- Preheat the oven to 400F (200C). Line a baking sheet with parchment paper.
- In a large bowl, combine the self-rising flour with the cottage cheese with a large spoon or hands until you have a shaggy dough.2 cups self-rising flour, 1 1/2 cups cottage cheese
- Transfer the dough to a clean surface and shape it into a large circle or rectangle, about 1/2 inch high, using your hands or a rolling pin. Make sure not to overwork the dough at this stage. Using a round cookie cutter, cut out 8 round biscuits or divide the dough into 8 equal shapes with a dough cutter.
- Transfer the biscuits to the lined baking sheet. Bake the cottage cheese biscuits in the oven for 20 minutes until they've risen up and are golden brown.

Ingredients and substitutions

- Flour – Self-rising flour is a 3 in 1 product containing all-purpose flour, baking powder, and salt making it a super convenient ingredient for biscuits. You can substitute the 2 cups of self-rising flour with 2 cups of all-purpose flour, 3 tsp of baking powder, and 1/2 tsp of salt if needed.
- Cottage cheese – I use full-fat cottage cheese for a rich cheesy flavor but you can opt for a lower-fat option as well.
- Optional flavorings – Depending on the salt content of your flour you might want to extra salt to the mixture. Grated parmesan or cheddar cheese make delicious additions as well and so do crispy bacon pieces. Finely chopped chives or parsley add color and extra flavor too. Jalapeños can spice the biscuits up nicely.
How to make 2-ingredient biscuits with cottage cheese

1. 2 ingredients, I promise!

2. Mix to combine into a shaggy dough. It seems dry at this stage but don’t fret!

3. Press the shaggy dough into a rectangle or round disc on a clean surface. Cut out the biscuits with a biscuits cutter or divide the dough into 8 equally sized portions by hand.

4. Transfer the cottage cheese biscuits to a lined baking tray and bake in a preheated oven for 20 minutes. Alternatively, add them unbaked straight to a casserole and cook as directed in the recipe.

Blend cottage cheese: Smooth cottage cheese distributes moisture more evenly for a more cohesive crumb.
Full-fat cheese: Choose full-fat cottage cheese for a rich, cheesy result.
Dough consistency: Add some milk a tablespoon at a time if needed depending on the cottage cheese you’re using to create a soft, slightly sticky dough that’s easy to handle.
Add cheese: Stir in grated parmesan or sharp cheddar for delicious cheesy biscuits.
Glaze: Add milk or heavy whipping cream on top of the biscuits for a deeper golden color.
