Cool down with these quick and easy homemade tropical popsicles. Made with only 3 pantry ingredients and 5 minutes of hands-on prep time, these piña colada inspired ice blocks are a must-try this summer.

Ingredients
 
 

  • 15 oz pineapple slices in syrup
  • 6 fluid ounces coconut milk
  • 2 tbsp honey

Instructions
 

  • Add the pineapple slices, coconut milk, and honey to the blender. Blend on high until smooth.

  • Pour the tropical ice block mixture into popsicle molds. Freeze for at least 4 hours or until fully set.
  • Carefully remove the tropical popsicles from the molds. Enjoy immediately!

Ingredients and substitutions

  1. Pineapple: I use canned pineapple slices in syrup but you can use fresh pineapple as well.
  2. Coconut milk: I use full-fat canned coconut milk.
  3. Honey: Light runny honey gives these popsicles a rich sweetness but you can also use maple syrup or agave syrup.

Tips to make tropical popsicles

1. Add all ingredients to a high-speed blender, food processor, or chop the pineapples slices into small pieces and use an immersion blender to create a smooth mixture.

2. Depending on your blender, you mind need to scrape down the sides to ensure all ingredients are smoothly combined.

3. Use popsicle molds with lids to prevent spills in the freezer.

4. For easy removal, run the popsicle molds under warm water for a few seconds before unmolding.
