This cucumber yogurt mint sauce, aka tzatziki, is perfect as a fresh dip with fresh vegetables, a condiment with grilled meats, or as a versatile sauce for salads and sandwiches.
In a medium bowl, combine Greek yogurt, grated cucumber (note 1), minced garlic, lemon juice, mint leaves, salt, and pepper.
1 cup Greek yogurt, 1/3 cup cucumber, 1 garlic clove, 1 tsp mint leaves, 1 tbsp lemon juice, 1 tsp salt, 1/4 tsp ground black pepper
Stir the ingredients together until well combined. Season further to taste.
Notes
Note 1: To prevent the sauce from becoming too watery, drain the grated cucumber on paper towels before adding it to the mixture.Note 2: Allow the flavors to meld by refrigerating the sauce for 30 minutes before serving.Storage: Leftover sauce can be stored in an airtight container in the refrigerator for up to 3 days. I don't recommend freezing the tzatziki.
