In a bowl, combine Greek yogurt and half of the honey.
2 cups Greek yogurt, 1/4 cup honey
Spread the yogurt mixture evenly on the prepared baking sheet.
In a small saucepan, stew the fruit and remaining honey for 5 minutes. Add the fruit straight to the yogurt layer or puree it with a handheld blender if you prefer a smoother consistency. Create swirls with the back of a spoon to spread out the topping.
1 cup mixed berries, 1/4 cup honey
Freeze for at least 3 hours or until solid.
Break into pieces and enjoy straight away before it melts or store in an airtight container in the freezer until serving.
Notes
Consistent layer: A consistent yogurt layer will result in an evenly frozen bark.Prevent icy bark: If you're freezing the bark for more than 4 hours, add a layer of clingfilm on top of the yogurt to prevent ice crystals from forming or freezer burn.
