Ingredients
 
 

  • 2 cups Greek yogurt
  • 1/4 cup honey divided
  • 1 cup mixed berries fresh or frozen

Instructions
 

  • Line a rimmed baking sheet with parchment paper.
  • In a bowl, combine Greek yogurt and half of the honey.
    2 cups Greek yogurt, 1/4 cup honey
  • Spread the yogurt mixture evenly on the prepared baking sheet.
  • In a small saucepan, stew the fruit and remaining honey for 5 minutes. Add the fruit straight to the yogurt layer or puree it with a handheld blender if you prefer a smoother consistency. Create swirls with the back of a spoon to spread out the topping.
    1 cup mixed berries, 1/4 cup honey
  • Freeze for at least 3 hours or until solid.
  • Break into pieces and enjoy straight away before it melts or store in an airtight container in the freezer until serving.

Notes

Consistent layer: A consistent yogurt layer will result in an evenly frozen bark.
Prevent icy bark: If you’re freezing the bark for more than 4 hours, add a layer of clingfilm on top of the yogurt to prevent ice crystals from forming or freezer burn.
Storage: Stored in an airtight container in the freezer, frozen yogurt bark can last for up to 1 month.

Ingredients and substitutions

Ingredients needed to make yogurt bark with berries.
  1. Greek yogurt – I use plain full-fat Greek yogurt but you can use lower-fat options as well. If you want to use homemade Greek yogurt, check out my Instant Pot yogurt recipe. The bark might get a bit more icy and less creamy though.
  2. Honey – Honey adds a delicious sweetness to the bark but you can also opt for maple syrup or agave syrup.
  3. Berries – Mixed frozen berries work well such as strawberries, blueberries, or raspberries but you can also use fresh berries, jam, or try my macerated blueberries. Just reduce the time you stew the fruit.

Tips for making frozen yogurt bark

1. You can fully combine the honey and yogurt or leave some honey streaks for more visual appeal.

2. Make sure you spread the yogurt evenly onto the baking tray for even freezing.

3. Drain off any excess liquid if needed to ensure the stewed berries don’t become too watery.

4. Let the stewed fruit cool a little before adding it on top of the yogurt or it will become too runny.

Chocolate bark: Add dark chocolate chips or melted chocolate before freezing.

Tropical twist: Use a combination of mango, pineapple, passionfruit, and coconut flakes.

Breakfast bark: Add a sprinkle of granola, seeds, chopped almonds, walnuts, or pecans.
