Yeast-Free Dinner Rolls (40 Min.)

Freshly baked rolls are one of the best and surprisingly easy sides in my opinion. Everyone loves the smell and taste of freshly baked rolls and they’re perfect for mopping up sauces, soups, and stews such as my rich lamb stew. Soft and fluffy when it comes to texture, they also make delicious slider buns, perfect for some pulled chicken sliders.

Yeast-Free Dinner Rolls

These quick yeast-free dinner rolls are super soft and fluffy and come together in 40 minutes flat with only 4 ingredients. Perfect side rolls for Thanksgiving, Christmas, or summer BBQs!

Ingredients
 
 

  • 5 cups self-rising flour Note 1
  • 1 1/4 tsp salt
  • 5 tbsp butter softened
  • 1 1/2 cups whole milk more to brush

Optional

  • 2 tbsp granulated sugar Note 2

Instructions
 

  • Preheat the oven to 350F (180 C) and line a 8×8-inch baking tin with parchment paper.
  • In the bowl of your stand mixer or a large mixing bowl, whisk the self-rising flour and salt.
    5 cups self-rising flour, 1 1/4 tsp salt, 2 tbsp granulated sugar
  • Add the softened butter and milk, and use the dough hook attachment to knead the dough on low speed for 2-3 minutes until you have a smooth and elastic dough.

  • Divide the dough into 16 portions to make small dinner bread rolls, or into 8 portions for large bread rolls.
  • To shape the dinner rolls, gently pull the outer edges up and towards the center of the dough and pinch them together. Cup your hand over the ball and move your hand in a small circular motion to create tension and nicely shaped dinner rolls.
  • Place the shaped rolls into the baking dish side by side. You want the edges to touch. Brush them with extra milk.
  • Bake the rolls for 30 minutes until fluffy and golden brown. Remove them from the oven, let them cool slightly, and serve while warm. Enjoy!

Notes

Note 1: You can substitute self-rising flour with 5 cups of all-purpose flour, 2 tbsp of baking powder, and 1 1/4 tsp of salt.
Note 2: I prefer unsweetened dinner rolls but you can add 1-2 tbsp of sugar along the flour to add some sweetness.
Storage: You can store the dinner rolls at room temperature for 3 days. Wrap them in a towel or store them in a bread box. Reheat and enjoy!

Ingredients and substitutions

  1. Self-rising flour: Or 5 cups of all-purpose flour + 2 tbsp of baking powder + 1 1/4 tsp of salt. Bread flour would work as well.
  2. Salt: Don’t skip it or the buns will taste bland.
  3. Butter: Unsalted or salted but reduce the salt by 1/4 tsp at that point.
  4. Milk: Whole milk is best but skim works too and so does leftover whey.

Step-by-step: yeast-free dinner rolls

Add wet to dry ingredients.

Knead for 2-3 minutes into a smooth dough.

Divide the dough into 16 equal portions (about 60g each).

Shape the dinner rolls by forming a cup over the dough pieces and rotating the hand gently in a circular motion.

Place them into a lined baking tin side by side.

Brush with extra milk before baking.

Make ahead: For larger gatherings or add these rolls to your weekly meal-prep routine, simply freeze the rolls unbaked (already shaped) or baked for up to 3 months in a sealable freezer bag or container. You can also store the dough in an airtight container in the fridge overnight and bake the rolls the next day.
