  • 1 cup cottage cheese full-fat
  • 1/2 cup whole milk
  • 1/4 cup parmesan cheese grated
  • 1 garlic clove small
  • 1 tsp salt
  • 1/4 tsp black ground pepper

Instructions
 

  • Add everything to a blender or a food processor. Blend until smooth.

  • Heat a pan over low heat. Add the sauce and heat it through while stirring for 3-5 minutes to incorporate the flavors even further. Season to taste with extra salt and ground black pepper.
  • Alternatively, skip the heating, and pour it over piping hot cooked pasta and serve it immediately.

Notes

Subs: Use half and half or heavy cream instead of whole milk for a creamier sauce. Mix things up with fresh or dried herbs such as parsley or chives.
Storage: The sauce does thicken up a fair bit if not used straight away. You can store leftover sauce in the refrigerator for up to 2 days and blend it again with some extra milk to loosen it up. However, for the best result, I recommend making it fresh.

Ingredients and substitutions

  • Cottage cheese – I use full-fat cottage cheese but you can also opt for a low-fat version.
  • Parmesan – Grated parmesan adds tons of flavor. Pecorino or mature cheddar cheese would work too. You can use nutritional yeast as well.
  • Garlic – I recommend using a small clove as you don’t want the sauce to be overly garlicky in my view but use as much as you like. You can also substitute it with 1/4 tsp of garlic powder for convenience.
  • Milk – The whole milk helps break up the cottage cheese and creates a creamy consistency. You can use lighter options too or heavy cream if you’re after an even creamier sauce.
  • Fresh herbs (optional) – 1/4 of a cup fresh parsley, basil, or chives to the mix for a herbed Alfredo sauce.

How to use it

Pasta sauce: Mix it with cooked fettuccine or homemade pappardelle pasta for a classic Alfredo-like dish or toss it with linguine and grilled chicken to make a lighter version of my chicken Alfredo linguine pasta.

Bakes: Use it as the creamy sauce in a bake like my hamburger and potato casserole baked or in pasta bakes.

With meat or fish: Spoon it over parmesan chicken cutlets for a creamy topping or use it as a sauce for crumbed or grilled fish.

Creamy veggies sauce: Toss it with roasted broccoli and cauliflower for a creamy, cheesy side dish.
