Ingredients
 
 

  • 1 cup Greek yogurt
  • 1/2 cup pickled gherkins finely chopped
  • 1 tbsp pickle juice
  • 1 garlic clove minced
  • 1 tbsp fresh dill finely chopped
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper

Instructions
 

  • In a small bowl, combine all ingredients.
    1 cup Greek yogurt, 1/2 cup pickled gherkins, 1 tbsp pickle juice, 1 garlic clove, 1 tbsp fresh dill, 1/2 tsp salt, 1/4 tsp ground black pepper
  • Season to taste with more pickle juice for some extra tang, salt, or black pepper.

Notes

Storage: Leftover pickle sauce can be stored in the fridge for up to 4 days – perfect for meal prep. I don’t recommend freezing it.

Ingredients and substitutions

  • Yogurt – I use Greek yogurt to make a thick dip-like sauce for burgers but you can use any plain yogurt and thin out the Greek yogurt with some milk to reach the desired consistency.
  • Pickles – Use your favorite dill cucumber pickles, just make sure you don’t use an overly sweet variety. You can substitute the dill pickle juice with fresh lemon juice or apple cider vinegar.
  • Dill – Fresh dill adds tons of flavor and works well with pickled veg.
  • Garlic – A fresh garlic clove is best but you can use 1/2 tsp of garlic powder if needed.
  • Optional flavors – Add finely chopped shallots, red onion, or green onion for a more savory flavor.

  1. Burger and kebabs: Use the sauce to make burgers, kebabs such as my lamb kofta kebabs, or sandwiches.
  2. Grilled meats: Make it a fresh condiment to go with steak, grilled chicken, or lamb shoulder chops.
  3. Seafood: The pickle-flavored sauce is a great alternative to tartar sauce and goes well with shellfish such as my tiger shrimp or grilled fish and salmon.
  4. Vegetables: Serve roast vegetables with a dollop of the dill pickle sauce. Especially roast new potatoes make a delicious match!
