Romesco Sauce (5 Min Blender Recipe)
This Romesco Sauce is the ultimate shortcut to rich, smoky, and versatile flavor. While the classic Catalan recipe uses stale bread for thickening, I’ve omitted it to create a super versatile sauce in just 5 minutes with a blender. Make this easy recipe to instantly flavor your next pasta dish, build a flavorful casserole, or serve it as a vibrant dip.

Why buy pasta sauces when you can make your own in 5 minutes flat using a blender? I typically make some blender sauces during my weekly ingredient prep sessions for Mediterranean-inspired casseroles and pasta bakes during the week as they store well in the fridge.
Just like my no-cook Marinara sauce and cottage cheese Alfredo sauce, this Romesco sauce instantly combines the flavors and creates a ready to use base for a variety of dishes.
Add some roast chicken, rice, or pasta, veg, some feta or grated cheese, and you’ll have a flavorful and super easy dinner with only a few hands-on minutes of work.

Romesco Sauce
Ingredients
- 14 oz diced tomatoes fire-roasted or plain
- 1 roasted red pepper large, deseeded
- 1 garlic clove or 2 roasted cloves
- 1 tbsp balsamic vinegar
- 1 tsp smoked paprika
- 2 tsp dried parsley or 1 tbsp fresh parsley
- 1/4 cup almond butter
- 1 tsp salt more to taste
Instructions
- Add all ingredients to a blender.14 oz diced tomatoes, 1 roasted red pepper, 1 garlic clove, 1 tbsp balsamic vinegar, 1 tsp smoked paprika, 2 tsp dried parsley, 1 tsp salt, 1/4 cup almond butter
- Blend until smooth. Season to taste with extra salt.
- Use in your favorite casserole and pasta dishes.

Ingredients and substitutions
- Tomatoes – Tinned or fresh diced tomatoes both work well. Use fire-roasted ones for extra depth of flavor.
- Peppers – Roasted peppers are key, I don’t recommend using raw peppers. You can use jarred ones though.
- Almonds – I use almond butter for convenience but you can blend blanched almonds as well before making the sauce. You can also use cashew nuts.
- Paprika – Smoked paprika is best but you can use sweet paprika if needed.
- Parsley – Fresh or dried both work well.
- Vinegar – Balsamic vinegar adds extra acidity and flavor.

- Pasta and rice dishes: Simply stir the sauce through some fresh pasta, rice, or other grains to instantly flavor those meal bases.
