Have you ever tried to assemble sliders with many components just for them to fall apart as you’re serving them? To make sure these lamb sliders make it to your guests in one handy serving, I simply packed as much flavor as possible into the patties themselves. That way you’ll save time on assembling the sliders and ensure they’re actually served hot.

Make the patties in under 30 minutes with some fresh Greek-inspired ingredients or simply meal prep them for up to 1 day to cut down on work on the day.

I love making sliders not just for parties but also for my kids as they rarely finish a big burger and struggle to keep it all together when holding them. These lamb sliders are a hit with them, minus the red onion of course!

Ingredients
 
 

Lamb Patties

  • 1 lb ground lamb
  • 1 tbsp fresh mint finely chopped
  • 1 tbsp fresh parsley finely chopped
  • 2 garlic cloves minced
  • 1 tsp ground cumin
  • 1 tsp ground paprika
  • 1/4 tsp red chili flakes
  • 1 tsp salt
  • 1/4 tsp ground black pepper
  • 1/3 cup feta crumbled

To Assemble

  • 9 slider brioche buns warmed
  • 3/4 cup tzatziki sauce
  • 1 cup baby salad leaves washed and dried
  • 1 red onion finely sliced

Instructions
 

  • Preheat the oven to 350F (180C).
  • To make the lamb patty mixture, combine the ground lamb, fresh herbs, spices, and minced garlic in a medium-sized bowl by hand. Once fully combined, gently incorporate the crumbled feta.
    1 lb ground lamb, 1 tbsp fresh mint, 1 tbsp fresh parsley, 2 garlic cloves, 1 tsp ground cumin, 1 tsp ground paprika, 1/4 tsp red chili flakes, 1 tsp salt, 1/4 tsp ground black pepper, 1/3 cup feta
  • To shape the slider patties, wet your clean hands lightly with water. Divide the meat mixture into 9 equal portions. Roll each portion into to a small ball first. Flatten them by hand or with the bottom of a cup until they are about 2 1/2 inches wide.
  • Cook the lamb slider patties on a preheated BBQ or in a heated pan on medium-high heat for 3 minutes on each side or until a meat thermometer inserted into the center of the patties shows 160°F (71C). Add 1 tbsp of olive oil to the pan if you're pan-frying them.
  • Meanwhile, cut the slider buns in half and heat them in a single layer on a baking sheet. Bake for 3 minutes until toasted.
  • To assemble the sliders, top the bottom bun with tzatziki sauce, salad leaves, lamb patty, red onion, and more tzatziki. Add the top bun and serve immediately!

Notes

Meal prep: Lamb patties can be made up to 1 day ahead and refrigerated until ready to cook. Remove them from the fridge 30 minutes before cooking.
Full-size burgers: This recipe will make about 4 full-sized lamb burgers.
Skewers: Add little skewers to secure the slider when handing them out at a gathering.
Storage: You can store leftover lamb sliders for a day but they will get soggy over time. I suggest meal-prepping the ingredients if possible and assembling the sliders fresh.

Ingredients and substitutions

  • Lamb – Ground lamb from the lamb shoulder works best as it has a higher fat percentage than lamb leg meat.
  • Fresh herbs – Fresh parsley and mint add some freshness and extra flavor to the patties. You can use fresh coriander, oregano, thyme, or rosemary as well.
  • Feta – Crumbled feta gives the patties extra flavor and some cheesiness. You can use goat cheese instead or omit it as well for a dairy-free patty.
  • Spices – Ground cumin, paprika, and red chili flakes add flavor and some subtle heat.
  • Veggies – Baby salad leaves and red onion add some color and texture to the sliders. My red cabbage salad, fresh cucumber slices, or pickles would be delicious too.
  • Tzatziki – I use my 7-ingredient tzatziki recipe but you can use store-bought sauce as well for convenience. My harissa yogurt sauce is a great option as well.
  • Buns – Soft brioche slider buns work well but you can also use soft pretzel buns or yeast-free dinner rolls. Small pita pockets make great sliders too.
