Oven Baked Hamburger Steaks
Simplify your meals with Oven Baked Hamburger Steaks. Whether you’re serving them as a budget-friendly protein with your favorite sides or cook them to make hamburgers, cooking ground beef patties in the oven offers a convenient and hands-off approach. Perfect for a midweek dinner or as meal prep item for some on-demand protein for beef bowls, salads, or quick lunch wraps.

Ground beef is a favorite in our house and these baked patties come in particularly handy if you’re preparing some oven-baked sides such pesto roasted vegetables or pretzel burger buns along with them. A complete oven-baked dinner is not only easy to clean-up but hands-off making dinner time a breeze. Plus, it’s a great bad weather option when the BBQ is out of bounce or you’re not up for scrubbing down the stove after pan-frying the ground beef patties.
The red onion trivet allows the sheet pan hamburger patties to cook evenly all-around without stewing in their fat, creating a leaner ground beef patty. Turn the roasted red onions into an onion gravy for some comfort food or add them to your burger as a topping.

Shape 5 equally sized beef patties, about 1 1/2 inch diameter and 1/2 inch thick.1 lb ground beef, 1 egg, 1/4 cup bread crumbs, 1/2 tsp Italian herbs, 1/2 tsp garlic powder, 1 tsp salt, 1/2 tsp ground black pepper

- Place the hamburger steaks on top of the red onions and push a little indent into the middle of the patties if you don't want them to bunch up and become too round.

Ingredients and substitutions

- Beef – I use a ground beef mix with 10% of fat for the hamburger steaks. You can opt for a leaner or fattier mix, keeping in mind that leaner beef can dry out more easily and fattier beef is juicier.
- Seasonings – I use an Italian herb mix to instantly flavor the hamburger patties alongside some garlic powder, salt, and ground black pepper.
- Breadcrumbs – White breadcrumbs help mind the beef mixture and add some extra volume to the baked hamburger steaks. You can also use whole breadcrumbs, panko, or even 2 tbsp of all-purpose flour.
- Egg – The egg, again, helps bind the ingredients together. You can substitute it with some milk.
- Onions – The red onion slices create a trivet for the ground beef steaks allowing them to cook all-around without stewing in their juices. Brown onions or other roast vegetables such zucchini or aubergine would work too.
Step-by-step: Oven Baked Hamburger Steaks

1. Add all ingredients to a bowl apart from the olive oil and red onions.

2. Mix to fully combine.

3. Slice the red onions into 1/4-inch thick slices and add them to a lined baking dish. Drizzle with olive oil and season with salt.

4. Shape hamburger steaks, about 1 1/2 inch wide and 1/2 inch thick. Place them on top of the onion rings and oven bake them for 30 minutes.
My top 5 hamburger steak tips
- Indents: If you want to bake burger patties, press a shallow indentation into the center of each patty before cooking to help them maintain a flatter shape and prevent them from bulging in the middle.
- Smash patties or sliders: Form thinner, smash burger-like patties if you want them to cook quicker. Shape smaller patties if you want to make ground meat sliders.
- Spice it up: Add 1/2 tsp of red pepper flakes for some heat and extra flavor.
- Rest up: Allow the cooked patties to rest for a few minutes before serving to help the juices redistribute for tender and juicy hamburger steaks.
- Meal prep: Make a double batch of beef patties and store them in the refrigerator or freezer for quick and easy meals throughout the week. Think beef bowls, salads, or meatball lunch wraps.
