Ingredients
 
 

  • 1 vanilla bean leftover or fresh
  • 1 cup powdered milk full-fat
  • 1/8 tsp salt
  • 1/2 tsp ground cinnamon optional
  • 1/4 cup powdered sugar optional

Instructions
 

  • Cut the vanilla bean in half. If it's a fresh bean, scrape the vanilla seeds out of it with them back of a knife.

  • Add all ingredients to a bowl, except the halved vanilla bean. Mix to combine. Add the mixture to a mason jar and add the lid. Shake to fully combine and store it in a cool and dry place for 2 weeks. Shake it every 2-3 days for the flavors to mingle.

  • Use the homemade coffee creamer within 4 weeks of opening the jar.

Notes

I use 2 tbsp of powdered creamer to make a milky coffee drink, that’s about 3 teaspoons.
Storage: Homemade powdered coffee creamer can be stored in a dark, cool, and dry place for up to 4 weeks. Alternatively, you can store the jar in the fridge.

Ingredients and substitutions

  • Powdered milk – I use full-fat powdered milk but you can also opt for a lighter powder or plant-based powdered milks.
  • Vanilla – A fresh or leftover vanilla bean works best for a rich flavor but you can use vanilla powder or vanilla sugar for an instant flavored coffee creamer without the wait. Scraping the seeds into the creamer creates a much more intense vanilla flavor than using a leftover bean but both options work well.
  • Salt – I use pink Himalayan salt but any salt will do here to enhance the flavors.
  • Cinnamon (optional) – I love to use some ground cinnamon to add extra warm flavors but that’s totally optional. Alternatively you can add a cinnamon stick alongside the vanilla bean to flavor the milk powder.
  • Sweetener (optional) – I prefer unsweetened coffee but you can add 1/4 cup powdered sugar to create a sweetened coffee creamer.

Mix the ingredients in a bowl or simply throw them all into the storage mason jar and shake.

Add the vanilla bean pieces last, shake, and store in a cool and dark place for a minimum of 2 weeks.
