Toasted Milk Powder (5 Minutes)

Take your cookies, desserts, and drinks up a notch with Toasted Milk Powder, a simple yet incredibly versatile ingredient that adds a rich, nutty flavor and a touch of sweetness. Similar to brown butter (without the extra calories!), toasted powdered milk adds rich caramel flavors to your dishes and is super easy to make in 5 minutes flat.

Why you’ll have to try toasting milk powder

I use full-fat milk powder for maximum flavor but you can also opt for skim milk powder if needed.

Variations

Spiced powder: Add 1 tsp of my chai spice mix or your favorite pumpkin spice to the milk powder before toasting for a warm, spiced flavor. Alternatively, add some cinnamon, nutmeg, or cardamom to the milk powder.

Maple sugar: Add maple sugar to the toasted milk powder for an instant rich sweetener. Perfect for drinks!

How to toast powdered milk in a pan

Step 1: Add milk powder to a dry non-stick pan over medium heat while constantly stirring.

Step 2: Once golden brown, remove it to a plate immediately to prevent it from burning. Let it cool completely and use it in your next milky recipe or store it in an airtight container in the fridge for up to 1 month.

Oven method

You can also toast milk powder in the oven although I prefer the pan as the oven method still requires constant supervision.

  1. Preheat your oven to a low temperature, around 250°F (120°C).
  2. Spread the milk powder evenly on a baking sheet lined with parchment paper.
  3. Place the baking sheet in the preheated oven and bake for 5-10 minutes, or until it turns a light golden brown and smells nutty.
  4. Stir the milk powder occasionally to ensure even toasting.
  5. Remove the baking sheet from the oven and let the milk powder cool completely before storing.

How to use toasted milk powder

  1. Drinks: Add 1-2 tablespoon of toasted milk powder to your coffee, tea, smoothies, and milkshakes for a creamy and rich flavor. Think toasted milk latte, toasted hot vanilla drink, pumpkin spiced hot chocolate, smoothies, and more.
  2. Baking: Add toasted milk powder to cookies, cakes, and muffins for a rich, nutty flavor. You can also use it to make an extra creamy cheesecake or different types of frostings.
  3. Bread: Whey powder is added to breads to improve their texture, color, and flavor. Add 1 tbsp of toasted milk powder to your next sandwich loaf. I add it to my soft whey bread.
  4. Desserts: Add it to your favorite milky desserts for some extra flavor and creaminess including no-churn stracciatella ice cream, custard, rice pudding, or semolina pudding.
  5. Savory dishes: Add extra creaminess to your curries, cream-based sauces, and soups.

Can I use skim milk powder?

While you can use skim milk powder, it won’t produce the same rich and creamy flavor as full-fat milk powder.

How long does toasted milk powder last?

When stored in an airtight container in the fridge, it can last for up to 1 month.

Is malted milk powder the same as toasted?

They are both milk-based powders, but malted milk powder has a sweet, nutty flavor from malted barley, while toasted milk powder has a rich, caramelized flavor from toasting.

  • 1/2 cup milk powder full fat

Instructions
 

  • Add the milk powder to a dry non-stick skillet over medium heat.
    1/2 cup milk powder
  • Toast the milk powder until it turns a light golden brown and smells nutty. Make sure to stir the milk powder constantly and monitor the color closely for about 3-4 minutes.
  • Remove from heat and transfer it to a plate to cool completely before storing it an airtight container. Don't leave the milk powder in the pan or it will continue to toast and potentially burn.

Notes

Full-fat milk powder: Nonfat milk powder will produce a less flavorful and less creamy result.
Stir constantly: To prevent burning, stir the milk powder continuously while toasting.
Watch the color: Toast the milk powder until it reaches a light golden brown, but don’t let it burn.
