Ingredients

  • 1 cup heavy cream
  • 3 tbsp brown sugar
  • 1 tsp vanilla extract

Instructions

  • Combine cream, brown sugar, and vanilla extract in a large bowl or the bowl of a stand mixer.
3 tbsp brown sugar, 1 tsp vanilla extract, 1 cup heavy cream
  • Start whipping the mixture at low speed with a hand mixer or your stand mixer to prevent splattering. Gradually increase to medium-high speed. Reduce back to medium speed once medium peaks begin to form. You're not looking for stiff peaks! The cream should be firm enough to hold its shape but not over-whipped to maintain a smooth texture. Stop whipping just before you think it's done as it will thicken slightly afterwards.
  • Taste the whipped cream and adjust sweetness if necessary.

Notes

Gradual sweetening: You can easily use a little bit less brown sugar if you like lightly sweetened cream. Simply add sugar gradually, tasting as you go. This way, you can customize the sweetness level to suit your preferences.
Over-whipped: If your cream has become a little grainy, simply add a splash of heavy cream to smooth out the mixture.
Storage: You can prepare the whipped cream ahead and store it in the refrigerator for up to a day. Whip it briefly before serving to restore its fluffy texture. I do not recommend freezing whipped cream as the texture changes once thawed.

Ingredients and substitutions

  1. Cream – Use cold heavy whipping cream, not light cream.
  2. Brown sugar – You can also use granulated sugar, coconut sugar, icing sugar, or natural sweeteners including maple syrup, honey, agave syrup, or stevia.
  3. Vanilla extract – Vanilla adds depth of flavor. For a more intense vanilla flavor, substitute the pure vanilla extract with 1 tsp vanilla syrup or vanilla essence if needed.
