Spicy Lamb Sausage Wraps

Spicy Lamb Sausage Wraps
Ingredients
- 4 lamb sausages Merguez or other
Lemon Yogurt Sauce
- 1/2 cup Greek yogurt
- 2 tbsp water
- 1 tbsp lemon juice
- 1/4 tsp lemon zest
- 1/2 tsp salt
- 1/4 tsp ground black pepper
Lamb Wraps
- 4 large tortilla wraps wholegrain or plain
- 4 cups mixed lettuce washed and dried
- 1/2 English cucumber cut into sticks
- 1/4 cup feta cheese
- 2 tbsp hot sauce Sriracha
- 2 tbsp fresh mint finely sliced
- 1 jalapeño red or green, sliced
Instructions
- To make the lamb sausage filling, remove the Merguez sausage meat from the casings. Heat a large cast-iron skillet or frying pan over medium heat. Add the lamb sausage meat and break it apart into little bits using a wooden spatula or spoon. Cook for 5 minutes until lightly browned and drain any excess fat.4 lamb sausages
- To make the lemon yogurt sauce combine all ingredients in a small bowl. Season to taste with salt and black pepper. Depending on the consistency of the yogurt you're using, add more water if the sauce is too thick.1/2 cup Greek yogurt, 2 tbsp water, 1 tbsp lemon juice, 1/2 tsp salt, 1/4 tsp ground black pepper, 1/4 tsp lemon zest
- Lay the large flour tortillas out on a surface. Spread 2 tbsp of lemon yogurt sauce in the middle of each wrap.4 large tortilla wraps
- Add 1 cup of washed and dried lettuce to each as well as 1/4 of the cooked lamb sausage and 3 cucumber sticks.4 cups mixed lettuce, 1/2 English cucumber
- Add 1 tbsp of crumbled feta cheese to each wrap, followed by a drizzle of hot sauce, and fresh mint leaves. Garnish with red jalapeño slices.1/4 cup feta cheese, 2 tbsp hot sauce, 2 tbsp fresh mint, 1 jalapeño
- Fold in the sides and tightly roll up the tortillas, starting from the bottom edge. Cut the wraps in half and serve immediately.

- Tortillas – I use large wholemeal flour tortillas as they’re easy to fold without ripping. You can use regular flour tortillas or make a lamb lettuce wrap as well.
- Lamb – I love using lamb sausages, Merguez in particular as they come with some heat already. Any sausage including chorizo will work for these wraps. Leftover lamb roast such as a roasted leg of lamb makes a delicious filling too.
- Vegetables – A lettuce mix, slaw, or red cabbage salad add color and texture.
- Lemon yogurt sauce – I make a quick and easy Greek yogurt sauce using my Instant Pot yogurt by mixing it with water for a thinner consistency, lemon juice, salt, and pepper. The yogurt balances the heat of the wrap.
- Spice – Hot sauce and jalapeño give the lamb sausage wraps extra spice. I use Sriracha but any hot sauce will do.
- Mint – A classic lamb flavor combination, mint works well with lamb and adds extra freshness to the easy lunch wrap.
