I often make BBQ pulled chicken as part of my weekly meal prep routine and these lunch wraps are another delicious way to turn it into quick and easy meal.

Just like my chicken salad wraps, meatball wraps, or lamb sausage wraps, you can make this tasty lunch in 5 minutes using only a few staple ingredients.

Ingredients
 
 

  • 1 tortilla wrap
  • 2 tsp mayonnaise
  • 2 tsp Sriracha sauce or other hot sauce
  • 1 cup baby lettuce leaves washed, dried
  • 1/4 red bell pepper sliced
  • 1/4 cucumber peeled, cut into sticks
  • 1/2 cup BBQ pulled chicken fully heated

Instructions
 

  • Lay out the flour tortilla on a large plate. Spread mayonnaise and Sriracha sauce in a horizontal line in the middle of the wrap.
    1 tortilla wrap, 2 tsp mayonnaise, 2 tsp Sriracha sauce
  • Add the baby lettuce leaves, followed by bell pepper and cucumber slices on top of the sauces.
    1 cup baby lettuce leaves, 1/4 red bell pepper, 1/4 cucumber
  • Add the heated BBQ pulled chicken on top. Add more mayonnaise and Sriracha sauce (optional).
    1/2 cup BBQ pulled chicken
  • Fold in the sides and tightly roll up the tortilla, starting from the bottom edge. 
  • Cut the wrap in half and serve immediately, or wrap it in tin foil, or parchment paper and store it in an airtight container for later.

Notes

Soften tortillas: Depending on the type of tortilla you’re using you might need to heat them slightly if they are too firm. Warm the tortilla for 20-30 seconds wrapped in a damp paper towel in the microwave to make them more pliable and prevent tearing.
Balance filling: Add the filling in the middle of the tortilla but don’t overfill to ensure a tight roll that stays together.

Pulled chicken wrap – quick and easy lunch

  • Wraps – Large soft flour tortillas work best (8 inches).
  • ChickenBBQ pulled chicken – fully heated through. Alternatively, you can simply combine cooked shredded chicken with BBQ sauce. Here are a few suitable chicken recipes: braised chicken thighs, parmesan chicken schnitzel, or smoked chicken salad.
  • Veggies – A lettuce mix and baby spinach give the wrap extra texture and nutrients for a complete meal. Sliced bell peppers, cucumber, or a coleslaw mix can add extra crunch and color as well. Red sauerkraut, dill pickles, or pickled red onions would make tasty additions too.
  • Sauces: I love adding some heat to the wrap with some Sriracha sauce. But any hot sauce will do. I use Kewpie mayo but again, any mayonnaise, or my homemade tzatziki would make a delicious base.

Recipe tips

Meal prep: Just like the BBQ pulled chicken, meal prep the salad ingredients as well and store them in containers in the fridge. That way lunch wraps come together even faster!

Low carb: Use low-carb tortillas or a large salad leaf to make low-carb and keto-friendly chicken wraps.

Add cheese: When heating the pulled chicken, add some grated cheese on top or throughout.
