Ground Beef Fritters
Golden hash browns meet juicy beef patties. These hearty ground beef fritters are a delicious combination of both. They can be made into a quick and easy midweek dinner or a filling appetizer to share with friends and family.

Beef and potato fritters make a frugal but tasty meal as a little meat is stretched over many portions by to adding potatoes. They make a filling and frugal appetizer, snack, or main dish and are another great example of saving money by cooking from scratch.

Ground Beef Fritters
Ingredients
- 1/2 lb ground beef
- 1 cup potatoes peeled and grated
- 1/2 red onion medium-sized, finely diced
- 1 garlic clove minced
- 1 egg medium-sized
- 1/4 cup all-purpose flour
- 1/2 tsp fresh rosemary finely chopped
- 1 tsp salt
- 1/4 tsp ground black pepper
- 2 tbsp olive oil for frying
Instructions
- In a large bowl, combine ground beef, grated potatoes, diced onion, minced garlic, egg, flour, dried rosemary, red onion, garlic, salt, and ground black pepper. Let the mixture thicken for 5 minutes.1/2 lb ground beef, 1 cup potatoes, 1/2 red onion, 1 garlic clove, 1 egg, 1/4 cup all-purpose flour, 1/2 tsp fresh rosemary, 1 tsp salt, 1/4 tsp ground black pepper
- Heat olive oil in a large skillet over medium heat. Spoon the mixture in little portions into the pan and flatten lightly. They should be about 2 inches wide and 1/2 an inch thick. Cook the fritters until golden brown and cooked through – about 3-4 minutes on each side.2 tbsp olive oil
- Place them on a paper towel-lined plate for the excess oil to be absorbed.
- Serve hot with your favorite dipping sauce such as my homemade tzatziki.

Ingredients and substitutions

- Ground beef – Lean grass-fed ground beef (about 85% lean meat) works well but you can also make this recipe with ground pork or lamb for a richer flavor.
- Potatoes – I recommend Yukon potatoes for this recipe as they hold their shape and give the fritters a golden hue. You can also use leftover mashed potatoes instead of grated potatoes for this recipe.
- Egg and flour – The egg and flour help bind the fritter mixture.
- Onion & garlic – Fresh red onion and garlic can be substituted with onion and garlic powder if needed.
- Seasoning – Fresh rosemary gives these fritters a rich flavor. You can use dried rosemary as well.
Variations
Cheese: Add shredded cheddar or Monterey Jack cheese to the mixture for a cheesy twist.
Herbs: Incorporate other dried or fresh herbs like parsley, thyme, or oregano for added flavor.
Vegetables: Mix in grated carrots, zucchini, corn, or bell peppers for extra nutrients and texture.
