Turkish Pizza (Lahmacun)

Growing up in Germany where Turkish guest workers introduced Turkish cuisine in the 1960s, my dad brought home Turkish food from a local vendor on Fridays when he finished work early. Lahmacun was a favorite on those days. My whole family loved the meaty flatbread rolled up and filled with coleslaw, yogurt sauce, and fresh herbs.

I got an Ooni pizza oven for Christmas and Lahmacun was on top of the list when thinking about homemade pizzas. We’ve been trying many pizza toppings over the last few weeks, this Turkish pizza was rated the top choice by the whole family – even beating my pesto pizza and sausage pizza. Turkish Pizza (Lahmacun)

Ingredients
 
 

  • 1 lb ground beef or ground lamb
  • 2 tbsp harissa paste
  • 1/4 cup fresh Italian parsley finely chopped, extra as garnish
  • 1 pizza base fresh or precooked, about 12 inches wide
  • 1/2 red onion finely sliced
  • 1/4 cup feta cheese crumbled

Instructions
 

  • Preheat your pizza oven or a pizza stone in your oven or BBQ.
  • In a small bowl, combine the ground beef with the harissa paste and freshly chopped parsley.

  • Shape the pizza dough on a lightly floured surface into a 12-inch wide pizza base.

  • Add the ground beef mixture to the base, distributing it evenly with your fingers covering the whole base apart from 1/2 inch of the edge.
  • Evenly place the sliced red onion and crumbled feta cheese on top of the pizza base.

  • Cook the pizza for 1-2 minutes in your pizza oven, rotating it frequently. If you're cooking it on a pizza stone in your conventional oven or BBQ, it'll take about 10 minutes to cook.
  • Remove the Turkish pizza from the pizza oven, oven, or BBQ, and garnish with freshly cut Italian parsley. Slice up the Lahmacun pizza and serve immediately!

Notes

Thin crust: Lahmacun is traditionally made with a very thin crust so it can be topped with fresh vegetables and rolled up into a kebab-style meal.
Add onion later: For a sharper onion taste, add the sliced red onion to the pizza once baked.
Storage: Leftover Turkish pizza can be stored in an airtight container in the fridge for 2 days. Reheat it in the oven or microwave.

Ingredients and substitutions

Ingredients laid out to make Turkish pizza (Lahmacun).
  • Beef – Ground beef or lamb – both work well for this recipe. Lahmacun (lahm bi’ajin) translates to “meat with dough” and it can be made with either.
  • Pizza dough – I use my cold fermented pizza dough recipe but any fresh pizza dough or thin pre-made pizza crust will work here.
  • HarissaHomemade harissa paste allows you to control the heat level and ingredients used but store-bought harissa works well too. Taste test the paste before using it to gauge the heat level of the paste.
  • Cheese – Feta adds saltiness and a freshness to the Turkish pizza but you can omit it as well as Lahmacun traditionally is made without cheese.
  • Onion – Red onion adds a milder taste than yellow onion but both work well here. You can also add the onions once the pizza has been baked for a stronger taste.
  • Herbs – Fresh Italian parsley works well here but fresh mint is another delicious option when using ground lamb.

1. Add the harissa paste and parsley to the ground beef.

2. Combine well.

3. Start shaping the pizza dough by flattening it with your fingers on a lightly floured surface.

4. Turn and stretch it “dj-style” to further shape it into a thin pizza crust.

5. Distribute the ground beef mixture on top of the shaped dough.

6. Add sliced red onion.

7. Crumble feta on top.

8. Bake the Turkish pizza. Add more parsley as a garnish and drizzle over the yogurt sauce just before serving.

My 3 top Lahmacun tips

Wrap it up: Add crunchy lettuce or a coleslaw such as my red cabbage salad on top alongside some sliced tomatoes, and red bell peppers. Add extra sauce such as my harissa yogurt or homemade tzatziki and roll it up into a kebab-style meal.

Spice it up: Add extra harissa on top of the meat mixture as well as some chili flakes for an extra spicy pizza.

Shortcuts: Use store-bought breakfast sausage meat and pizza dough or crust to create an even faster Turkish pizza.
