Honey Stewed Berries

Honey stewed berries are incredibly easy to make and add fruity flavors and a burst of color to a variety of dishes including breakfast, snacks, and desserts. Whether you’re serving the berries warm over ice cream as a dessert or as a topping for pancakes in the mornings, this versatile compote is part of my weekly meal prep routine during the cooler months.

  • Save money and waste: I buy discounted berries, often blueberries and strawberries, at the end of the season when prices are low and freeze them for smoothies and this stewed berry recipe later in the year. A great way to save money by cooking from scratch and reducing food waste in the process.

Ingredients and substitutions

  • Mixed berries – Use a variety of fresh or frozen berries for a complex flavor profile. My frozen berry mix includes strawberries, raspberries, blueberries, and boysenberries. Cranberries and currants make great additions too.
  • Honey – I use a mild-flavored runny honey but maple syrup, agave syrup, or sugar all work well too to sweeten the berries. You can opt for natural sweeteners such as monkfruit and stevia for a sugar-free alternative.
  • Water – You only need to add extra water if you’re using fresh berries to prevent them from burning to the bottom of the saucepan.

Step 1: Add frozen berries to a small saucepan. Bring them to a simmer and stew them on low heat for 10 minutes.

Step 2: Add honey to sweeten the berries once stewed. Let the stewed fruit cool before storing them in an airtight container in the fridge for up to a week.

Ingredients
  

  • 2 cups mixed berries frozen or fresh
  • 3 tbsp honey
  • 1/4 cup water for fresh berries only

Instructions
 

  • Add frozen berries and water in a small saucepan over medium heat.
    2 cups mixed berries, 1/4 cup water
  • Bring them to a gentle simmer, stirring occasionally.
  • Reduce heat and cook until berries are softened and the juices thicken, about 5-7 minutes (Note 1).
  • Stir in honey (or desired sweetener) and cook for another minute. Sweeten to taste.
    3 tbsp honey
  • Remove from heat and let cool slightly before serving.

Notes

Note 1: If you’re using fresh berries, reduce the stewing time by half and add 1/4 cup of water to prevent them from burning.
